Beef Stroganoff

This is one of my favorite meals that my mom used to make for us.
this recipe is from our unhealthy cook books not a healthy one :(

2-3 lb round stem, cut up
3-4 cans cream of mushroom soup
32 oz sour cream
beef bullion
3 c uncooked rice

Cut up meat and simmer in beef bullion for 1-2 hours, depending on cut of meat. 
Start rice to cook
When rice is added to boiling water,add soup and sour cream to beef, heat through.
Serve stroganoff over rice


Notes 

Ground beef can be used instead of stake and tastes just as good
Our family does sour cream and the mushroom soup to taste.

Lemon curd

I really love lemon so that means that I automatically love this lemon curd!
Makes about 1.5 cups.
Ingredients:
1/2 cup butter
1/2 cup xylitol blend sweetener (or another zero calorie sweetener equivalent to 1/2 cup sugar)
1/2 cup fresh lemon juice
1/4 cup lemon zest
6 egg yolks
Melt the butter in a small saucepan on low heat.  Remove from heat and whisk in sweetener, lemon juice, and lemon zest until dissolved.  Whisk in the egg yolks and return to the stove over low heat.  Whisk continually until the curd starts to thicken.  Remove from the heat and strain into a small bowl.  Let cool to room temperature, then cover and store in the refrigerator for up to one month.

THM hot chocolate!

This is from serene's blog copy and pasted but my mom loves this recipe so I guess it's a keeper!

8-12oz. Hot water
Pure Stevia extract to taste (try 1-2 “doonks” – and just so you know, the word “doonk” means 1/32 of a tsp. in Pearl’s and my THM cooking vocabulary – a very small amount)
1 rounded tsp. cocoa powder
1 pinch Celtic Sea Salt
1 dash vanilla
1 doonk Gluccomannan
1 tsp. of MCT oil (or you can use coconut oil if you don’t have MCT oil)
1 tsp. of Grass Fed butter
1 tsp. Whey Protein Powder
Directions:
Put all ingredients in blender except for gluccie and whey protein. (For the Rich version which is used for THM S purposes) include both 1 tsp. MCT oil or coconut oil and 1 tsp. butter. For the light version (for THM FP and E purposes) use either 1 tsp. of MCT oil or ½ tsp. butter and omit the other tsp. of fat).

Cake batter Protein shake

1/2 cup low fat cottage cheese 
1 scoop whey protein powder
3-5 drops butter or almond extract
1 tbs Vanilla sugar free instant pudding mix  
3-5 stevia packets or sweetener of choice to taste (we use trivia not sure the exact measurements but its mostly to taste)
1/2 cup water
5- 10  Ice cubes (depending on how thick you like it0

Optional- 1/2 tsp xanthen gum and/or sprinkles for topping 


Put all the ingredients into a blender (we have a vitamix) and mix up until it's the desired consistency.

T op with sprinkles and enjoy!

Almond milk recipe

So If you gonna do THM one of the things you will be using a lot is almond milk.
You can buy it if it's easier but here is a recipe thats a little cheaper!


Homemade almond milk or almond flour
Soak 1 cup raw almonds overnight. Drain and rinse. Place almonds in blender with 5 cup water. Blend on high for 2 mins (less in vitamin) Strain through cheese cloth and squeeze excess milk into bowl. Add pinch of seas salt & dash of vanilla. Store in fridge. evenly distribute almond meal on cookie sheet. Bake at 225 stirring every 10 mins until completely dry. Run through grinder for finer flour, use as is for almond meal.
